I hold a bachelor’s degree in Biology from Hunter College, New York, a Master’s degree in Plant-Based Nutrition from Universita’ Politecnica delle Marche, and I trained in plant-based culinary arts at the Natural Gourmet Institute in New York. I taught Nutrition at American schools, where I launched theory-and-practice projects (garden and kitchen) in plant-based food education, “From Seed to Plate.” I have always strived to convey to my students that our food choices have a significant impact on our health, on animals, and on the planet we live on.
